A Garden Sanctuary in the High Desert

More than 100 years old, the property of Casa Culinaria - The Gourmet Inn is composed of three historic houses set within a compound of approximately 10,000 square feet of mature gardens. Thoughtfully maintained with an eco-conscious approach, the landscape is irrigated through a drip system and illuminated with low-voltage LED lighting, allowing beauty, atmosphere, and sustainability to coexist naturally.

The gardens unfold through three seasons of bloom and texture. Beginning in March, bulbs emerge with tulips and daffodils, followed in April by lilacs, the first peonies, and several varieties of wild roses. From June through September, French and English lavender bring fragrance and color, accompanied by a wide range of seasonal flowers, including lilies and other summer blooms. Fruit trees, including apricots and espalier apple trees, add structure and character, while the chef’s herb garden offers mint, basil, thyme, and other fresh herbs that connect the landscape to the culinary spirit of the property.

The garden design also embraces the native language of the high desert, with dedicated areas of local plantings including agaves and a variety of cactus. These sections create a beautiful contrast with the lush flowering beds and reinforce the property’s connection to the natural landscape of Santa Fe.

A rich variety of mature trees, including Chinese almonds and Japanese maples, lends shade, seasonal contrast, and a strong sense of place. In summer, their canopy provides generous natural shade throughout the gardens, making the outdoor spaces especially inviting. In autumn, the changing colors are equally striking, bringing another layer of beauty and seasonal drama to the property.

Terraces are integrated throughout the garden spaces, creating quiet corners for reading, resting, or simply enjoying the surroundings.

Just as important is the life the gardens attract. Birds are a constant presence, and their song is part of the daily atmosphere of Casa Culinaria - The Gourmet Inn. Together, the gardens, terraces, native plantings, mature trees, and wildlife create a setting that feels serene, intimate, and unusually lush for Santa Fe — a meaningful part of the property’s identity and one of the qualities our guests remember most.
