The Gourmet Breakfast Experience at Casa Culinaria in Santa Fe

For many of our guests, breakfast is the whole reason they booked their stay with us. Our gourmet breakfast in Santa Fe is the reason they come back.

Carolina Cosignani and Manuel Lezcano de Orleans, the owners who founded Casa Culinaria almost a decade ago, built the inn around that conviction. Carolina and her kitchen team make each morning's brunch by hand, inspired by the places she and Manuel have lived and traveled to.

This is what a stay at Casa Culinaria is built around: the menu, the chef behind it, and the two very different tables where it all comes together.

What Makes Our Gourmet Breakfast Different?

Most hotel breakfasts are something to eat on the way out the door. Our culinary experience is the reason to slow down and stay a little longer at the table. Courtesy of our kitchen team, it's a meal built to be savored, not rushed.

Nothing here is reheated or pre-made. What lands on your plate comes from real cooking, learned firsthand in kitchens across Mexico, France, Italy, Spain, and Chile.

Our menu keeps moving too, with approximately 15 seasonal menus and around 50 variations across the year. Visit again next season, and you won't recognize the table.

Meet Our Le Cordon Bleu Chef, Carolina

Every recipe on your plate begins with Carolina Cosignani, our Executive Chef and Co-Owner. She earned her training at Le Cordon Bleu in both Haute Cuisine and Patisserie, and carries it into our kitchen each morning alongside her team.

You'll often find her there yourself, moving between the stove and the dining room, an unmistakable presence at the center of the house. Years spent cooking and learning in Mexico, France, Italy, Spain, and Chile shaped her palate long before she ever set foot in Santa Fe. That history shows itself in something as simple as how she finishes a sauce.

Every recipe begins with her, then takes shape alongside her sous chef and a small, dedicated kitchen team who help carry her vision to your table.

Meet Our Sommelier and Aesthete, Manuel

Manuel is our co-owner, an experienced sommelier and aesthete whose decades of travel show in the smallest details of the house. Look closely, and that eye reveals itself in nearly every room.

The antiques and art surrounding you were gathered with intention on trips he and Carolina took together, long before Casa Culinaria existed. Each piece earned its place in the collection on its own merits.

Ask him about whichever piece catches your eye. He remembers where nearly all of them came from, and has a story for almost every one.

What's On Our Table

Our menus turn with the seasons, each one shaped by a place Carolina has cooked and lived. A dish rarely arrives without a memory attached to it.

Depending on the season, our table travels somewhere different entirely:

  • Mexico: Roasted corn dressed a half-dozen different ways, a bright pickled vegetable alongside, a salsa built for real heat.

  • France: A quiche still warm from the oven, or a crêpe folded around something savory instead of sweet.

  • Italy: Creamy ricotta, toasted pine nuts, delicate zucchini blossoms, and a polenta that holds its own next to a slice of tiramisu.

  • Spain: A classic tortilla, a crisp croquette, shavings of manchego, maybe a spoonful of quince to finish.

  • England: A soft-scrambled egg, good sausage, and a scone still warm from the oven.

Brunch always follows the same architecture, fresh juice and homemade yogurt to start, something warm from the oven alongside, a savory course, and dessert to close. Tell us about any dietary needs in advance, and we'll take care of the rest.

Come back in a different season, and the table looks entirely different.

Where We Serve Breakfast

Each season sets its own backdrop for the morning, and both are worth experiencing at least once.

On the Terrace

From mid-May through mid-October, brunch moves outside onto our terrace, one of the most requested settings of a stay here. Roses climb the walls, and orange day lilies and purple iris crowd the beds below. Umbrellas and patio heaters mean a cool morning never stands between you and eating outside.

At the Communal Table

The rest of the year, guests gather around one indoor table, coffee in hand, before the conversation even starts. Even in winter, when snow settles over the garden paths just beyond the window, the property holds a quiet beauty our guests return for.

Brunch is served in three morning seatings: 8am, 9:15am, and 10:15am. Both settings were built with the same intention, places where strangers end up talking like old friends by the time the plates are cleared.

Our kitchen closes on Wednesdays, so brunch isn't served that morning.

Save Your Seat at the Table

Breakfast here is as carefully prepared as everything else about the stay. For some guests, it's the reason the whole trip got planned in the first place.

Choose a seat on the terrace or a spot at the communal table, and you'll leave with a story: something the kitchen made, or something Manuel pointed out on your way to the door. We set out to build mornings like that almost a decade ago, and it's still what draws us into the kitchen each morning.

Come see what's waiting on your plate. Reserve your room at Casa Culinaria – The Gourmet Inn, and save your seat at the table.
